About Chef Paul

Originally a native of Pittsburgh, Paul J. Morrison III has been involved with the Chicago restaurant scene for the last ten years. Once an aspiring emcee and Freestyle Battle Champion, Paul brings his leadership skills and artistic talents to the restaurant industry, from mentoring aspiring young culinarians to forging innovative menus and dishes. He received his bachelor’s degree in culinary management right here at the Illinois Institute of Art and has been crafting his style ever since.

In a previous position, Paul had a unique opportunity to work for his childhood hero, Michael Jordan, at Michael Jordan’s Steakhouse in both Chicago and Connecticut and the 23 Sportscafe at the Mohegan Sun Casino. While on the East Coast, Paul won the Mohegan Sun Iron Chef Challenge, happily defeating many celebrity chefs. In 2014, Paul joined Miller’s Pub as the Executive Chef, continuing the restaurant’s favorite dishes and bringing fresh ideas and menu concepts to a beloved establishment in the heart of the Loop.

Paul’s farm to plate style and his passion for seasonal cuisine has made him a perfect fit for the traditional fair at Miller’s Pub. Paul’s love of food is perhaps only met by his love of travel. Most recently, he traveled to Ireland to learn more about his heritage and the local cuisine, which you can find reflected in Miller’s Pub dishes like a half roasted Amish Chicken with tarragon lemon jus and Irish Beurre Blanc. Paul’s food philosophy is to keep it simple. Invest in the best ingredients available, cook them properly, and the dish will speak for itself.
